Whether you are celebrating with your significant other, friends or family, these delectable classic chocolate treats are sure to make your Valentines day even sweeter.

 

 

Chocolate Dipped Strawberries

Chocolate dipped strawberries


Bag of Milk chocolate or dark chocolate chips (or your choice of any chocolate you prefer!)
Quart of Strawberries

Melt chocolate on low heat stirring frequently. Once chocolate is melted, dip strawberries and place on a tray with parchment paper. Optional: use crushed nuts or candy and sprinkle over melted chocolate on strawberries for additional flavour or decoration. Place in refrigerator for 30 minutes or until the chocolate is hardened on the outside of the strawberry.

Raspberry Chocolate Cupcakes

Raspberry Chocolate Cupcakes

For the cupcake:
½ c. margarine
4 tbsp cocoa
½ c. oil
1 c. water
2 c. sugar
2 c. flour
Pinch of salt
2 eggs
½ c. milk
1 tsp baking soda
1 tsp vanilla

For the frosting:
½ c. butter
4 oz cream cheese
3.5 c. icing sugar
¼ tsp vanilla

Garnish: fresh raspberries

Mix margarine, cocoa, oil and water in a pot on the stove and bring to a boil. Remove from heat and allow to cool. Once mixture is cooled, add the eggs and beat. In a small dish, mix the milk and baking soda until dissolved. Add this to chocolate mixture. Add vanilla and remaining dry ingredients and beat until smooth. Preheat oven to 350 degrees. Place paper liners into the cupcake pan and pour mixture in filling each cup approximately ¾ full. Bake for approx. 25 minutes or until toothpick comes out clean when put into center of cupcake.  Allow cupcakes to cool before applying the frosting. Once frosted, garnish with fresh raspberries.

For the frosting:
½ c. butter
4 oz cream cheese
3.5 c. icing sugar
¼ tsp vanilla
12 raspberries for garnishing

Shortbread cookies

Shortbread cookies
For the cookies: 
1 c. butter – softened to room temperature
2 tbsp shortening
½ c. icing sugar
½ c. cornstarch
2 c. flour
Heart shaped cookie cutter

For the frosting:
2 c. icing sugar
¼ c. milk
1 tsp vanilla
Food colouring to make red or pink frosting.

Optional: Use candy hearts or sprinkles for added decoration. 

Preheat oven to 350 degrees. Beat together the butter and shortening. Mix in icing sugar and cornstarch. Add flour 1 cup at a time and beat mixture. Using a rolling pin, roll out mixture on the counter. (note: use a small amount of flour on countertop to avoid the dough from sticking.) Use cookie cutter to cut out each cookie. Bake on cookie sheet for 5-8 minutes until golden brown. Meanwhile, whisk together the frosting ingredients. Once cookies are cooled, apply frosting and decorations to the cookies.

Chocolate Mousse
Chocolate Mousse 2

1 c. whipping cream – whipped
3 tbsp milk
1 c. milk chocolate chips (or semi sweet)  
1 tsp vanilla
Strawberries for garnish (Optional: mint leaves for garnish as well)

Melt chocolate and milk in a pot on stove over low heat and allow to cool slightly. Add vanilla to the chocolate and then gently mix in the whipped cream. Place into serving dishes and add strawberries and mint for garnish. Chill in refrigerator until the mixture is set.
