Fall is in the air; the days and nights are getting cooler and the leaves are starting to change. For all the sports fans, that could mean only one thing…its time to cozy up and enjoy watching your favourite teams play each week. These pairings are easy prep and delicious…and of course ideal for game day…a match with any sport.

Buffalo Chicken Dip


2 cooked chicken breasts cut into small cubes
3/4 cup Frank's Hot sauce
1 pkg (8oz) cream cheese
1 cup ranch dressing
2 cup shredded cheese

Blend cream cheese and ranch dressing. Add Franks hot sauce, cubed chicken and one cup of shredded cheese. Mix well. Place mixture into a large casserole dish. Spread remaining shredded cheese on top of the mixture. Heat in oven on 375 degrees for 10 minutes or until the cheese is melted and dip is starting to bubble.

Serve warm with tortilla chips, crackers or veggies.

Mac and Cheese


1 lb elbow pasta
1/2 cup butter
1/2 cup flour
1 1/2 cups whole milk
2 1/2 cups cereal cream
4 cups sharp old cheddar cheese (shredded)
2 cups marble cheese (shredded)
1 cup grated parmesan
1/2 tbsp salt
1/2 tsp pepper
1/4 tsp paprika

Boil pasta and drain. In a large saucepan melt butter on medium heat adding flour in slowly and whisking to keep smooth. Slowly pour milk and cereal cream and continue to whisk. Continue cooking until sauce has thickened. Remove from heat and stir in spices and old cheddar cheese. Stir until cheese is melted and mixture is smooth. Mix pasta with sauce. In a large casserole dish, empty half of the pasta mixture. Spread one cup of marble cheese on top. Add remaining pasta mixture. Spread marble cheese and grated parmesan on top. Bake at 325 degrees for 15 minutes until cheese is bubbly and melted.

Sloppy Joes


1 tbsp olive oil
1 lb ground beef
1/4 cup finely chopped onions
1 cup tomato sauce
1/2 cup ketchup
3 tbsp brown sugar
1 tbsp mustard
2 tbsp Worcestershire sauce
1 tsp chili powder
1/2 tsp pepper
1/2 tsp garlic salt
1/2 tsp onion powder
Brioche buns

In a large skillet, add olive oil and ground beef and cook over medium heat, breaking apart the ground beef into crumbles as it cooks. When the ground beef is almost cooked, add remaining ingredients and let cook until sauce has thickened. Toast the buns on broil in the oven for 2-3 minutes or until golden brown. Serve mixture on toasted buns. Optional: add cheese and sliced pickles.

1 lb of ground beef
1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced
1/2 cup onion, diced
1/2 cup bread crumbs
1 can (8 oz) diced tomatoes
1 egg
1/4 c. ketchup
1/4 cup BBQ sauce
1 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper

1/3 c. ketchup
2 tbsp brown sugar

Preheat oven to 375 degrees. Mix all ingredients well in a large bowl. Form into a loaf in a pan. Bake for approximately 45 minutes. Mix ketchup and brown sugar in separate bowl. Spread over top of the meat loaf and bake for an additional 15 minutes or until meatloaf is done.

Potato Skins


6-8 medium to large sized potatoes
6 slices of bacon
1 cup shredded cheese
1/2 cup green onion
Sour cream

Preheat oven to 425 degrees. Wash potatoes and puncture in 3-4 places using a fork. Microwave on high for 10-12 minutes. When potatoes are cooked through, cut in half and scoop out middle of potatoes leaving behind a thin layer (about 1/4 - 1/2 inch) with the skin. Brush butter on the inside of the scooped out potatoes and place face down on a baking tray. Bake for 10 minutes. Meanwhile, in a medium skillet, cook bacon until crispy. Let cool and chop into small pieces.  When potatoes are done in oven, add shredded cheese, bacon bits and green onion to them. Return them to the oven and allow to bake for approximately 5 minutes until cheese has melted. Serve immediately with sour cream on the side.
